Walnut crusted Beef Roast

Ingredients

900 g beef roast, eye rump centre
1 cup fresh breadcrumbs
0.5 cup coarsely chopped walnuts
0.25 cup wholegrain mustard
1 tbsp finely chopped chives

Method

1 Preheat fan forced * oven to 180°C.
2 Combine breadcrumbs, walnuts, mustard and chives.
3 Press firmly over roast.
4 Place beef on roasting rack. Cook for approx 45 minutes. ( allow 30 minutes per 500g)
5 Remove from oven and cover loosely with foil. Rest for 10 minutes.
6 Recipe note: *if using a conventional oven, you may need to increase temperature or allow additional cooking time

Tips

1 Carve into thick slices against the grain. Drizzle with pan juices. Serve with roasted vegetables.
