Pepper Beef Medallions

Ingredients

600 g piece eye rump side beef
2 tsp crushed garlic
1 tbsp cracked black pepper
0.25 cup finely chopped parsley

Method

1 Combine garlic, pepper and parsley.
2 Roll beef in pepper mixture.
3 Cut into steaks 25- 30mm thickness.
4 Preheat BBQ or cast iron griddle plate to high heat.
5 Cook steaks for 3-4 minutes until juices are pooling on surface. Turn and cook further 3-4 minutes. Steaks should feel springy when pressed with back of tongs.
6 Remove to warm plate. Cover loosely with foil and rest for 5 minutes.

1 Serve with grilled vegetables
