Ingredients

600 g chuck, cut into 25mm cubes
20 ml olive oil
1 brown onion, cut into wedges
100 g mild salami, cut into strips
1 red capsicum, cut into thick strips
400 g can diced tomatoes
1 cup split green olives
1 tsp dried oregano leaves

Method

1 Heat oil in large non stick pan over high heat. Cook beef in 2-3 batches for 5 -10 minutes until well browned. Remove each batch from pan as cooked and set aside.
2 Add onions and salami to pan and cook for 5 minutes until onions have softened and salami is crisp.
3 Reduce heat to low. Return beef to pan with remaining ingredients. Stir well to loosen any browning in the pan.
4 Simmer, uncovered, for 20- 30 minutes until beef is tender.

Tips

1 Serve with creamy polenta or hot buttered pasta
