Walnut crusted Beef Roast

900 gbeef roast, eye rump centre
1 cupfresh breadcrumbs
0.5 cupcoarsely chopped walnuts
0.25 cupwholegrain mustard
1 tbspfinely chopped chives


1Preheat fan forced * oven to 180°C.
2Combine breadcrumbs, walnuts, mustard and chives.
3Press firmly over roast.
4Place beef on roasting rack. Cook for approx 45 minutes. ( allow 30 minutes per 500g)
5Remove from oven and cover loosely with foil. Rest for 10 minutes.
6Recipe note: *if using a conventional oven, you may need to increase temperature or allow additional cooking time


Carve into thick slices against the grain. Drizzle with pan juices. Serve with roasted vegetables.
