Sweet chilli lime goat ribs

Ingredients

0.25 cancan Sweet chilli sauce
1.5 tbspLime juice
2 tbspCanola or rice bran oil
1 tspfinely grated ginger
2 tbspsalt reuced soy sauce
500 gGoat ribs

Method

1Place the sweet chilli sauce in a large non metallic bowl with the lime juice, oil, ginger and soy. Stir until combined then add the goat racks and coat in the marinade. Cover and refrigerate for up to 3 hours.
2Heat oven to 170C. Take the racks from the marinade (reserving the marinade to baste) and lay on an oiled wire rack in a large baking tray lined with baking paper. Cook for 20-25 minutes, basting regularly with the reserved marinade until cooked and sticky.
3Serve with asian style coleslaw or vermicelli noodle salad.
4Note : cover racks with foil if they start to brown too quickly.
