Italian Beef Bake

Ingredients

600 gBeef mince
0.5 cupdried breadcrumbs
0.25 cupsun dried tomato pesto
1 tspdried oregano leaves
4baby bocconcini
0.25 cupbaby spinach leaves
4long strips streaky bacon, rindless

Method

1Preheat fan forced * oven to 180°C.
2Combine mince, breadcrumbs, pesto and oregano. Form mince into 4 large flat patties.
3Top centre of each patty with spinach, and bocconcini. Bring sides up to fully enclose filling. Roll into a ball.
4Wrap with a strip of bacon around circumference of ball, securing ends underneath.
5Place beef bakes on baking tray lined with baking paper. Cook for 30 minutes until bacon is crispy and beef is cooked through.
6Recipe note: *if using a conventional oven, you may need to increase temperature or allow additional cooking time

Tips

Serve with oven roasted tomatoes and extra baby spinach.
