Beef Chermoula

900 gbeef roast
1 tbspolive oil
1 tbsplemon juice
1 tbspsweet chilli sauce
1 tspdry chilli flakes
0.25 cupchopped coriander leaves
2 tspcrushed garlic
1 tbspcracked black pepper


1Preheat fan forced* oven to 180°C.
2Cut 2cm deep slits in roast, against the grain.
3Combine all marinade ingredients. Pile on top of roast and massage into slits.
4Cook roast in roasting dish for approx.30 minutes per 500g or until cooked to desired doneness.
5Remove beef. Cover loosely with foil to keep warm. Stand for 10 minutes.
6Recipe note: *if using a conventional oven, you may need to increase temperature or allow additional cooking time


Carve into thick slices against the grain. Serve with cous cous salad.
