Mediterranean Lamb Steaks

Ingredients

600g Lamb leg steaks, 25mm thick
2 tablespoons Olive oil
1 tablespoon Finely grated orange zest
2 teaspoons Dried oregano leaves
½ teaspoon Cracked black pepper

Method

1 Combine oil, orange oregano and pepper. Arrange steaks in a single layer on shallow glass dish. Pour over marinade.
2 Cover and refrigerate for at least one hour.
3 Heat large non stick frying pan over moderately high heat.
4 Cook lamb steaks for 3 minutes on each side, until well browned. Remove to warm plate and cover loosely with foil to keep warm. Stand for 5 minutes. Serve immediately.

1 Serving Suggestion: Serve with fennel, orange, olive and parsley salad.
